Ingredients

  • 1 can of chickpeas, drained and rinsed
  • 1/4 cup of vegan mayonnaise
  • 1 tablespoon of soy sauce
  • 1 teaspoon of sesame oil
  • 1 teaspoon of rice vinegar
  • 1/2 teaspoon of grated ginger
  • 1/4 cup of shredded carrots
  • 1/4 cup of sliced cucumbers
  • 4 slices of whole grain bread
  • Salt and pepper to taste

Instructions

  • 1. In a bowl, mash the chickpeas with a fork until slightly chunky.
  • 2. Add vegan mayonnaise, soy sauce, sesame oil, rice vinegar, ginger, salt, and pepper to the mashed chickpeas. Mix well.
