- 1 can of chickpeas, drained and rinsed
- 1/4 cup of vegan mayonnaise
- 1 tablespoon of soy sauce
- 1 teaspoon of sesame oil
- 1 teaspoon of rice vinegar
- 1/2 teaspoon of grated ginger
- 1/4 cup of shredded carrots
- 1/4 cup of sliced cucumbers
- 4 slices of whole grain bread
- Salt and pepper to taste
Instructions
- 1. In a bowl, mash the chickpeas with a fork until slightly chunky.
- 2. Add vegan mayonnaise, soy sauce, sesame oil, rice vinegar, ginger, salt, and pepper to the mashed chickpeas. Mix well.
- 3. Spread the chickpea mixture onto two slices of bread.
- 4. Top with shredded carrots and sliced cucumbers.
- 5. Cover with the remaining slices of bread to make sandwiches.
