Vegan Jackfruit Delight
This vegan dish is a delicious and healthy alternative to traditional meat-based meals. Jackfruit is used as a meat substitute and is packed with flavor and nutrition.
Nutrition Per Serving
- 2 cans of jackfruit
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 can of diced tomatoes
- 1 can of tomato sauce
- 1 tablespoon of chili powder
- 1 teaspoon of cumin
- 1 teaspoon of smoked paprika
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 cup of chopped fresh cilantro
- Drain and rinse the jackfruit.
- Heat a large skillet over medium heat and add the onion and garlic. Cook until the onion is translucent.
- Add the jackfruit, red and green bell peppers, diced tomatoes, tomato sauce, chili powder, cumin, smoked paprika, salt, and black pepper to the skillet. Stir to combine.
- Cover and simmer for 20-25 minutes, stirring occasionally.
- Remove from heat and stir in the chopped cilantro.
- Serve hot with rice or tortillas.
