Ingredients

  • 2 cans of jackfruit
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 can of diced tomatoes
  • 1 can of tomato sauce
  • 1 tablespoon of chili powder
  • 1 teaspoon of cumin
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 cup of chopped fresh cilantro

Instructions

  • Drain and rinse the jackfruit.
  • Heat a large skillet over medium heat and add the onion and garlic. Cook until the onion is translucent.
  • Add the jackfruit, red and green bell peppers, diced tomatoes, tomato sauce, chili powder, cumin, smoked paprika, salt, and black pepper to the skillet. Stir to combine.
  • Cover and simmer for 20-25 minutes, stirring occasionally.
  • Remove from heat and stir in the chopped cilantro.
  • Serve hot with rice or tortillas.
