Ingredients
- 1 cup red lentils
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon turmeric
- 1/2 teaspoon cinnamon
- 1/2 teaspoon cayenne pepper
- 1 can diced tomatoes
- 1 can coconut milk
- 2 cups vegetable broth
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion, garlic, and ginger until the onion is translucent.
- Add the spices and cook for another minute.
- Add the lentils, tomatoes, coconut milk, and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the lentils are tender.
- Use an immersion blender or transfer to a blender and puree until smooth.
- Season with salt and pepper to taste.
- Serve hot with naan or rice.
