Ingredients

  • 1 cup red lentils
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon turmeric
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon cayenne pepper
  • 1 can diced tomatoes
  • 1 can coconut milk
  • 2 cups vegetable broth
  • Salt and pepper to taste

Instructions

  • In a large pot, sauté the onion, garlic, and ginger until the onion is translucent.
  • Add the spices and cook for another minute.
  • Add the lentils, tomatoes, coconut milk, and vegetable broth.
