Ingredients

  • 1 cup cooked quinoa
  • 1 cup cooked black beans
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 whole wheat burger buns
  • Lettuce, tomato, and other desired toppings

Instructions

  • In a large bowl, mash the black beans with a fork or potato masher.
  • Add the cooked quinoa, breadcrumbs, onion, bell pepper, garlic, soy sauce, smoked paprika, cumin, salt, and black pepper to the bowl.
  • Mix well until all ingredients are combined.
  • Form the mixture into 4 patties, about 1/2 inch thick.
  • Heat a non-stick skillet over medium heat and lightly grease with cooking spray or oil.
  • Cook the patties for 4-5 minutes on each side, or until golden brown and heated through.
  • Toast the burger buns if desired.
  • Assemble the burgers by placing a patty on each bun, and topping with lettuce, tomato, and any other desired toppings.
  • Serve immediately and enjoy!
