Ingredients

  • 1 block of firm tofu
  • 1/2 cup of cooked quinoa
  • 1/2 avocado
  • 1/4 cup of black beans
  • 1/4 cup of diced tomatoes
  • 1/4 cup of diced red onion
  • 1/4 cup of chopped cilantro
  • 1 tablespoon of olive oil
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of garlic powder
  • Salt and pepper to taste

Instructions

  • 1. Drain and press the tofu to remove excess water.
  • 2. Crumble the tofu into a bowl and add the smoked paprika, garlic powder, salt, and pepper. Mix well.
  • 3. Heat the olive oil in a pan over medium heat. Add the crumbled tofu and cook for 5-7 minutes, stirring occasionally.
  • 4. In a separate pan, heat the black beans and quinoa.
  • 5. Slice the avocado and dice the tomatoes and red onion.
  • 6. Assemble the bowl by adding the tofu, quinoa, black beans, avocado, tomatoes, and red onion.
  • 7. Top with chopped cilantro and enjoy!
