Vegan Eggcellent Breakfast Bowl
This vegan breakfast bowl is packed with protein and flavor, perfect for starting your day off right!
Nutrition Per Serving
- 1 block of firm tofu
- 1/2 cup of cooked quinoa
- 1/2 avocado
- 1/4 cup of black beans
- 1/4 cup of diced tomatoes
- 1/4 cup of diced red onion
- 1/4 cup of chopped cilantro
- 1 tablespoon of olive oil
- 1 teaspoon of smoked paprika
- 1/2 teaspoon of garlic powder
- Salt and pepper to taste
- 1. Drain and press the tofu to remove excess water.
- 2. Crumble the tofu into a bowl and add the smoked paprika, garlic powder, salt, and pepper. Mix well.
- 3. Heat the olive oil in a pan over medium heat. Add the crumbled tofu and cook for 5-7 minutes, stirring occasionally.
- 4. In a separate pan, heat the black beans and quinoa.
- 5. Slice the avocado and dice the tomatoes and red onion.
- 6. Assemble the bowl by adding the tofu, quinoa, black beans, avocado, tomatoes, and red onion.
