Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup mushrooms, sliced
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) black beans, rinsed and drained
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Directions

    Rinse quinoa under cold water and set aside.

    In a medium saucepan, bring vegetable broth to a boil. Add quinoa, cover, and simmer on low until liquid is absorbed, about 15-20 minutes.
