Ingredients
- 1 cup cooked quinoa
- 1 can chickpeas, drained and rinsed
- 1/2 cup chopped walnuts
- 1/2 cup chopped dried apricots
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup tahini
- 2 tablespoons lemon juice
- 1 tablespoon maple syrup
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 375°F.
- In a large bowl, combine the quinoa, chickpeas, walnuts, apricots, parsley, and mint.
- In a small bowl, whisk together the tahini, lemon juice, maple syrup, cumin, salt, and pepper.
- Pour the tahini mixture over the quinoa mixture and stir until well combined.
- Using a tablespoon, scoop the mixture and form into small balls.
- Place the balls on a baking sheet lined with parchment paper.
