  • 1 can chickpeas, drained and rinsed

  • 1/2 cup chopped dried apricots
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon maple syrup
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Preheat the oven to 375°F.
  • In a large bowl, combine the quinoa, chickpeas, walnuts, apricots, parsley, and mint.
  • In a small bowl, whisk together the tahini, lemon juice, maple syrup, cumin, salt, and pepper.
