Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup mushrooms, sliced
- 1 can diced tomatoes
- 1 can black beans, rinsed and drained
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15-20 minutes or until all the liquid is absorbed.
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté until fragrant, about 2 minutes.
- Add the bell pepper, zucchini, and mushrooms to the skillet. Cook until the vegetables are tender, about 5 minutes.
- Stir in the diced tomatoes, black beans, chili powder, cumin, paprika, salt, and pepper. Cook for an additional 5 minutes, stirring occasionally.
- Fluff the cooked quinoa with a fork and add it to the skillet. Stir until well combined and heated through.
- Serve the vegan delight hot, garnished with fresh cilantro.
