Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 cup mushrooms, sliced
  • 1 can diced tomatoes (14 oz)
  • 1 can black beans, rinsed and drained (15 oz)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Directions

    Bring vegetable broth to a boil in a saucepan. Stir in quinoa, cover, and simmer on low for 15-20 minutes, until liquid is absorbed.

    Heat olive oil in a skillet over medium heat. Sauté onion and garlic for 2 minutes until fragrant.

    Add bell pepper, zucchini, and mushrooms. Cook for 5 minutes until vegetables are tender.
