Ingredients
- 1 cup almond flour
- 1 cup dates, pitted
- 1 cup cashews, soaked overnight
- 1/2 cup coconut oil, melted
- 1/4 cup date syrup
- 1/4 cup lemon juice
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- 1. Preheat the oven to 350°F (175°C).
- 2. In a food processor, blend the almond flour and dates until well combined.
- 3. Press the mixture into the bottom of a greased 9-inch springform pan to form the crust.
- 4. In the same food processor, blend the soaked cashews, melted coconut oil, date syrup, lemon juice, vanilla extract, and salt until smooth and creamy.
- 5. Pour the filling over the crust in the springform pan.
- 6. Bake for 25-30 minutes, or until the edges are set and the center is slightly jiggly.
- 7. Remove from the oven and let cool completely before refrigerating for at least 4 hours, or overnight.
- 8. Once chilled, remove the cheesecake from the springform pan and serve.
