Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1/2 tsp vanilla extract
  • 1/4 tsp sea salt
  • 1/2 cup dark chocolate chips

Instructions

  • Preheat the oven to 350°F.
  • In a large bowl, mix together the rolled oats, almond flour, shredded coconut, maple syrup, melted coconut oil, vanilla extract, and sea salt.
  • Line a baking sheet with parchment paper.
  • Using a cookie scoop or spoon, form the mixture into small balls and place them on the prepared baking sheet.
  • Bake for 15-20 minutes, or until golden brown.
  • Remove from the oven and let cool for 5 minutes.
  • Melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between, until fully melted.
  • Dip each ball into the melted chocolate and place back on the baking sheet.
  • Refrigerate for at least 30 minutes, or until the chocolate has hardened.
  • Serve and enjoy!
