Vegan Crunch Bites
These vegan crunch bites are a perfect snack for any time of day. They are crunchy, savory, and packed with flavor. Plus, they are super easy to make!

- 1 cup rolled oats
- 1/2 cup almond flour
- 1/2 cup unsweetened shredded coconut
- 1/4 cup maple syrup
- 1/4 cup coconut oil, melted
- 1/2 tsp vanilla extract
- 1/4 tsp sea salt
- 1/2 cup dark chocolate chips
- Preheat the oven to 350°F.
- In a large bowl, mix together the rolled oats, almond flour, shredded coconut, maple syrup, melted coconut oil, vanilla extract, and sea salt.
- Line a baking sheet with parchment paper.
- Using a cookie scoop or spoon, form the mixture into small balls and place them on the prepared baking sheet.
- Bake for 15-20 minutes, or until golden brown.
- Remove from the oven and let cool for 5 minutes.
- Melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between, until fully melted.
- Dip each ball into the melted chocolate and place back on the baking sheet.
- Refrigerate for at least 30 minutes, or until the chocolate has hardened.
