Ingredients

  • 1 package of vegan chicken substitute
  • 1 cup of vegetable broth
  • 1 tablespoon of soy sauce
  • 1 tablespoon of nutritional yeast
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1/2 teaspoon of paprika
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of salt
  • 2 tablespoons of olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 bell pepper, diced
  • 1 cup of mushrooms, sliced
  • 1 cup of frozen peas
  • 1 cup of cooked rice

Instructions

  • In a bowl, combine the vegetable broth, soy sauce, nutritional yeast, garlic powder, onion powder, paprika, black pepper, and salt. Stir well to combine.
  • Add the vegan chicken substitute to the bowl and let it marinate for at least 30 minutes.
  • Heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic. Cook until the onion is translucent and the garlic is fragrant.
  • Add the marinated vegan chicken substitute to the skillet. Cook for 5-7 minutes, or until heated through.
  • Add the diced bell pepper, sliced mushrooms, and frozen peas to the skillet. Cook for an additional 5 minutes, or until the vegetables are tender.
  • Serve the vegan chicken delight over cooked rice. Enjoy!
