Ingredients
- 2 cups cooked chickpeas
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 carrot, diced
- 1 zucchini, diced
- 1 can diced tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pan over medium heat.
- Add onion and garlic and sauté until fragrant.
- Add red bell pepper, carrot, and zucchini. Cook until vegetables are tender.
- Add cooked chickpeas, diced tomatoes, tomato paste, cumin, paprika, turmeric, salt, and pepper. Stir well to combine.
- Simmer for 10-15 minutes, until flavors are well blended.
