Ingredients
- 2 cups vegetable broth
- 1 package ramen noodles (discard seasoning packet if not vegan)
- 1 cup mixed vegetables (such as carrots, bell peppers, and mushrooms)
- 1/2 cup tofu, diced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon sriracha (optional)
- 1 green onion, sliced
- 1 tablespoon sesame seeds
Instructions
- In a large pot, bring the vegetable broth to a boil.
- Add the ramen noodles and cook according to package instructions.
- While the noodles are cooking, heat the sesame oil in a skillet over medium heat.
- Add the mixed vegetables and tofu to the skillet and cook until tender.
- Once the noodles are cooked, drain them and add them to the skillet with the vegetables and tofu.
- Pour in the soy sauce and sriracha (if using) and stir to combine.
- Cook for an additional 2-3 minutes, until everything is heated through.
- Divide the ramen into bowls and garnish with sliced green onions and sesame seeds.
