Ingredients

  • 2 cups vegetable broth
  • 1 package ramen noodles (discard seasoning packet if not vegan)
  • 1 cup mixed vegetables (such as carrots, bell peppers, and mushrooms)
  • 1/2 cup tofu, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sriracha (optional)
  • 1 green onion, sliced
  • 1 tablespoon sesame seeds

Instructions

  • In a large pot, bring the vegetable broth to a boil.
  • Add the ramen noodles and cook according to package instructions.
  • While the noodles are cooking, heat the sesame oil in a skillet over medium heat.
  • Add the mixed vegetables and tofu to the skillet and cook until tender.
  • Once the noodles are cooked, drain them and add them to the skillet with the vegetables and tofu.
