Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, drained and rinsed
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1/2 red onion, sliced
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/4 tsp salt
- 1 avocado, sliced
- 1 lime, cut into wedges
- Fresh cilantro, chopped
Instructions
- Preheat oven to 400°F.
- In a large bowl, toss the sliced bell peppers, zucchini, yellow squash, and red onion with olive oil, chili powder, cumin, garlic powder, paprika, and salt.
- Spread the veggies out on a baking sheet and roast for 20-25 minutes, or until tender and slightly charred.
- While the veggies are roasting, rinse the quinoa and add it to a medium saucepan with the vegetable broth. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes, or until the quinoa is tender and the liquid is absorbed.
- To assemble the bowls, divide the cooked quinoa among four bowls. Top with the roasted veggies, black beans, sliced avocado, and chopped cilantro.
- Serve with lime wedges for squeezing over the top.
