Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1/2 red onion, sliced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1 avocado, sliced
  • 1 lime, cut into wedges
  • Fresh cilantro, chopped

Instructions

  • Preheat oven to 400°F.
  • In a large bowl, toss the sliced bell peppers, zucchini, yellow squash, and red onion with olive oil, chili powder, cumin, garlic powder, paprika, and salt.
  • Spread the veggies out on a baking sheet and roast for 20-25 minutes, or until tender and slightly charred.
  • While the veggies are roasting, rinse the quinoa and add it to a medium saucepan with the vegetable broth. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes, or until the quinoa is tender and the liquid is absorbed.
  • To assemble the bowls, divide the cooked quinoa among four bowls. Top with the roasted veggies, black beans, sliced avocado, and chopped cilantro.
  • Serve with lime wedges for squeezing over the top.
