Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon active dry yeast
  • 1 cup warm water
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 tomato, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  • In a large mixing bowl, combine the flour, salt, and sugar. Mix well.
  • In a small bowl, dissolve the yeast in warm water. Let it sit for 5 minutes until it becomes frothy.
  • Add the yeast mixture and olive oil to the flour mixture. Mix until a dough forms.
  • Transfer the dough to a floured surface and knead for about 5 minutes until it becomes smooth and elastic.
  • Place the dough in a greased bowl and cover it with a clean kitchen towel. Let it rise for 1 hour or until it doubles in size.
  • Meanwhile, heat olive oil in a pan over medium heat. Add the onion and garlic and sauté until they become translucent.
  • Add the bell peppers, tomato, oregano, thyme, paprika, salt, and pepper. Cook for about 5 minutes until the vegetables are tender.
  • Preheat the oven to 450°F (230°C).
  • Punch down the dough and divide it into 4 equal portions. Roll out each portion into a thin circle.
  • Place the rolled-out dough on a baking sheet. Spread the vegetable mixture evenly on top of each dough.
  • Sprinkle shredded mozzarella cheese on top of the vegetables.
  • Bake in the preheated oven for 12-15 minutes or until the edges are golden brown and the cheese is melted and bubbly.
  • Remove from the oven and garnish with fresh parsley.
  • Serve hot and enjoy!
