Ingredients
- 1 lb ground turkey
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 can diced tomatoes
- 1 cup chicken broth
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- In a large pot or Dutch oven, cook the ground turkey over medium heat until browned, breaking it up with a wooden spoon as it cooks.
- Add the onion, garlic, and red bell pepper to the pot and cook until the vegetables are softened, about 5 minutes.
- Add the black beans, kidney beans, diced tomatoes (with their juices), chicken broth, chili powder, cumin, paprika, salt, and black pepper to the pot and stir to combine.
- Bring the chili to a simmer and let it cook for 20-30 minutes, stirring occasionally, until the flavors have melded together and the chili has thickened slightly.
- Serve the chili hot, garnished with your favorite toppings (such as shredded cheese, sour cream, or chopped cilantro).
