Ingredients

  • 1 lb ground turkey
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 cup chicken broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  • In a large pot or Dutch oven, cook the ground turkey over medium heat until browned, breaking it up with a wooden spoon as it cooks.
  • Add the onion, garlic, and red bell pepper to the pot and cook until the vegetables are softened, about 5 minutes.
  • Add the black beans, kidney beans, diced tomatoes (with their juices), chicken broth, chili powder, cumin, paprika, salt, and black pepper to the pot and stir to combine.
  • Bring the chili to a simmer and let it cook for 20-30 minutes, stirring occasionally, until the flavors have melded together and the chili has thickened slightly.
  • Serve the chili hot, garnished with your favorite toppings (such as shredded cheese, sour cream, or chopped cilantro).
