Ingredients

  • 1 cup taro root, grated
  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup coconut milk
  • 1/2 cup pineapple juice
  • 1 egg
  • 2 tbsp vegetable oil
  • 1/2 cup shredded coconut

Instructions

  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together the coconut milk, pineapple juice, egg, and vegetable oil.
  • Add the wet ingredients to the dry ingredients and stir until just combined.
  • Fold in the grated taro and shredded coconut.
  • Heat a nonstick skillet or griddle over medium heat.
  • Scoop 1/4 cup of batter onto the skillet for each pancake.
  • Cook until bubbles form on the surface of the pancake and the edges start to dry, then flip and cook for an additional 1-2 minutes.
