  • 1 celery stalk, diced
  • 1 bell pepper, chopped
  • 1 can (14 oz) diced tomatoes
  • 3 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh cilantro
