Ingredients

  • 2 lbs. ripe tomatoes, chopped
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 jalapeno pepper, seeded and minced
  • 1 tbsp. olive oil
  • 1 tsp. cumin
  • 1 tsp. chili powder
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 cup chopped fresh cilantro

Instructions

  • In a large skillet, heat the olive oil over medium heat.
  • Add the onion and garlic and sauté until softened, about 5 minutes.
  • Add the jalapeno pepper and sauté for another minute.
  • Add the chopped tomatoes, cumin, chili powder, salt, and black pepper.
  • Stir well and bring to a simmer.
  • Reduce the heat to low and let simmer for 20-25 minutes, stirring occasionally.
  • Stir in the chopped cilantro and serve hot.
