Ingredients
- 2 lbs. ripe tomatoes, chopped
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 jalapeno pepper, seeded and minced
- 1 tbsp. olive oil
- 1 tsp. cumin
- 1 tsp. chili powder
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/4 cup chopped fresh cilantro
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the onion and garlic and sauté until softened, about 5 minutes.
- Add the jalapeno pepper and sauté for another minute.
- Add the chopped tomatoes, cumin, chili powder, salt, and black pepper.
- Stir well and bring to a simmer.
- Reduce the heat to low and let simmer for 20-25 minutes, stirring occasionally.
- Stir in the chopped cilantro and serve hot.
