Experience the dance of flavors with Tomato Tango, a zesty and aromatic tomato-based dish that's perfect for any meal. This modern take highlights the natural sweetness and acidity of fresh tomatoes, enhanced by aromatic spices. Ideal for a weeknight dinner or a flavorful side dish.

Ingredients

  • 2 lbs ripe tomatoes, chopped
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 jalapeno pepper, seeded and minced
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1/4 cup chopped fresh cilantro

Directions

  1. 1

Heat olive oil in a large skillet over medium-high heat.

  2. 2

Add onion and garlic, sauté until the onion becomes translucent, about 3-4 minutes.

  3. 3

Mix in the jalapeno pepper and cook for another minute.

  4. 4

Stir in the chopped tomatoes, cumin, chili powder, salt, and pepper.

  5. 5

Bring the mixture to a simmer, then reduce heat to low.

  6. 6

Let simmer uncovered, stirring occasionally, for 15-20 minutes until the tomatoes are soft and aromatic.

  7. 7

Remove from heat and stir in fresh cilantro.

  8. 8

Serve hot as a main dish or side.

Chef's tip

For a milder version, reduce or omit the jalapeno. This dish pairs well with crusty bread or rice.
