Ingredients

  • 8 oz chow mein noodles
  • 1 lb beef sirloin, thinly sliced against the grain
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 14 oz can diced tomatoes, drained
  • 3 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp vegetable oil

Directions

    Cook the chow mein noodles according to the package instructions. Drain and set aside.

    In a bowl, combine soy sauce, cornstarch, sugar, salt, and black pepper. Set aside.

    Heat 1 tbsp of vegetable oil in a large skillet over high heat. Add beef and stir-fry until browned, about 3-4 minutes. Remove and set aside.

    Add 1 tbsp oil to the skillet. Stir-fry bell peppers, onion, and garlic until tender-crisp, about 3 minutes.

    Return the beef to the skillet. Add the can of diced tomatoes and soy sauce mixture. Bring to a boil and cook until the sauce thickens, about 2 minutes.
