Ingredients

  • 1 stalk lemongrass, bruised
  • 3 kaffir lime leaves
  • 3 slices galangal
  • 2 Thai chilies, sliced
  • 1 cup mushrooms, sliced
  • 1 tomato, cut into wedges
  • 1/2 cup shrimp, peeled and deveined
  • 4 cups chicken broth
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1/4 cup cilantro, chopped

Instructions

  • In a large pot, bring the chicken broth to a boil.
  • Add the lemongrass, kaffir lime leaves, galangal, and Thai chilies.
  • Simmer for 10 minutes.
  • Add the mushrooms, tomato, and shrimp.
  • Simmer for another 5 minutes.
