Ingredients

  • 1 cup brown rice
  • 1 block firm tofu, drained and pressed
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 yellow onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro

Instructions

  • Cook the brown rice according to package instructions.
  • While the rice is cooking, cut the tofu into cubes.
  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the tofu and cook for 5-7 minutes, stirring occasionally, until golden brown.
  • Add the sliced bell pepper and onion to the skillet and cook for an additional 5 minutes, until the vegetables are tender.
  • Add the minced garlic and cook for 1-2 minutes, until fragrant.
  • In a small bowl, whisk together the soy sauce, rice vinegar, honey, and red pepper flakes.
  • Pour the sauce over the tofu and vegetables and stir to coat.
  • Divide the cooked rice between 4 bowls and top with the tofu and vegetable mixture.
  • Garnish with chopped green onions and cilantro.
