Ingredients
- 1 cup brown rice
- 1 block firm tofu, drained and pressed
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 yellow onion, sliced
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon honey
- 1/4 teaspoon red pepper flakes
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
Instructions
- Cook the brown rice according to package instructions.
- While the rice is cooking, cut the tofu into cubes.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the tofu and cook for 5-7 minutes, stirring occasionally, until golden brown.
- Add the sliced bell pepper and onion to the skillet and cook for an additional 5 minutes, until the vegetables are tender.
- Add the minced garlic and cook for 1-2 minutes, until fragrant.
- In a small bowl, whisk together the soy sauce, rice vinegar, honey, and red pepper flakes.
- Pour the sauce over the tofu and vegetables and stir to coat.
- Divide the cooked rice between 4 bowls and top with the tofu and vegetable mixture.
- Garnish with chopped green onions and cilantro.
