Ingredients

  • 2 ripe bananas
  • 1/2 cup tiger nut flour
  • 1/2 cup almond flour
  • 1/4 cup coconut sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup almond milk
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract

Instructions

  • Preheat the oven to 350°F (180°C).
  • In a large bowl, mash the bananas with a fork.
  • Add the tiger nut flour, almond flour, coconut sugar, baking powder, baking soda, and salt. Mix well.
  • Add the almond milk, melted coconut oil, and vanilla extract. Mix until well combined.
  • Line a muffin tin with paper liners. Spoon the batter into the muffin cups, filling each about 2/3 full.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
