- 2 ripe bananas
- 1/2 cup tiger nut flour
- 1/2 cup almond flour
- 1/4 cup coconut sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup almond milk
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (180°C).
- In a large bowl, mash the bananas with a fork.
- Add the tiger nut flour, almond flour, coconut sugar, baking powder, baking soda, and salt. Mix well.
- Add the almond milk, melted coconut oil, and vanilla extract. Mix until well combined.
- Line a muffin tin with paper liners. Spoon the batter into the muffin cups, filling each about 2/3 full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Remove from the oven and let cool for a few minutes before serving.
