Ingredients

  • 8 ounces rice noodles
  • 1 tablespoon vegetable oil
  • 1 cup tofu, diced
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 1/2 cup snap peas
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon brown sugar
  • 1 tablespoon sriracha sauce
  • 1/4 cup chopped peanuts
  • 2 green onions, sliced
  • Fresh cilantro, for garnish

Instructions

  • Cook the rice noodles according to package instructions. Drain and set aside.
  • Heat the vegetable oil in a large skillet or wok over medium heat.
  • Add the tofu and cook until golden brown, about 5 minutes. Remove from the skillet and set aside.
  • In the same skillet, add the red bell pepper, carrot, snap peas, and garlic. Cook for 2-3 minutes, until the vegetables are tender-crisp.
  • In a small bowl, whisk together the soy sauce, lime juice, brown sugar, and sriracha sauce.
  • Add the cooked noodles, tofu, and sauce to the skillet. Toss to coat everything evenly.
  • Cook for an additional 2-3 minutes, until heated through.
  • Serve the Thai tofu noodle garnished with chopped peanuts, sliced green onions, and fresh cilantro.
