Ingredients
- 8 ounces rice noodles
- 1 tablespoon vegetable oil
- 1 cup tofu, diced
- 1 red bell pepper, sliced
- 1 carrot, julienned
- 1/2 cup snap peas
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 tablespoon brown sugar
- 1 tablespoon sriracha sauce
- 1/4 cup chopped peanuts
- 2 green onions, sliced
- Fresh cilantro, for garnish
Instructions
- Cook the rice noodles according to package instructions. Drain and set aside.
- Heat the vegetable oil in a large skillet or wok over medium heat.
- Add the tofu and cook until golden brown, about 5 minutes. Remove from the skillet and set aside.
- In the same skillet, add the red bell pepper, carrot, snap peas, and garlic. Cook for 2-3 minutes, until the vegetables are tender-crisp.
- In a small bowl, whisk together the soy sauce, lime juice, brown sugar, and sriracha sauce.
- Add the cooked noodles, tofu, and sauce to the skillet. Toss to coat everything evenly.
- Cook for an additional 2-3 minutes, until heated through.
- Serve the Thai tofu noodle garnished with chopped peanuts, sliced green onions, and fresh cilantro.
