Ingredients

  • 2 chicken breasts, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves of garlic, minced
  • 1 tablespoon of vegetable oil
  • 1/4 cup of Thai sweet chili sauce
  • 2 tablespoons of soy sauce
  • 1 tablespoon of fish sauce
  • 1 tablespoon of lime juice
  • 1 tablespoon of brown sugar
  • 1/4 cup of chopped fresh cilantro
  • 1/4 cup of chopped peanuts

Instructions

  • In a large skillet, heat the vegetable oil over medium heat.
  • Add the chicken and cook until browned, about 5 minutes.
  • Add the bell peppers, onion, and garlic to the skillet and cook for an additional 5 minutes.
  • In a small bowl, whisk together the Thai sweet chili sauce, soy sauce, fish sauce, lime juice, and brown sugar.
  • Pour the sauce over the chicken and vegetables in the skillet.
  • Cook for another 2-3 minutes, until the sauce has thickened slightly.
