Ingredients
- 2 chicken breasts, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 2 cloves of garlic, minced
- 1 tablespoon of vegetable oil
- 1/4 cup of Thai sweet chili sauce
- 2 tablespoons of soy sauce
- 1 tablespoon of fish sauce
- 1 tablespoon of lime juice
- 1 tablespoon of brown sugar
- 1/4 cup of chopped fresh cilantro
- 1/4 cup of chopped peanuts
Instructions
- In a large skillet, heat the vegetable oil over medium heat.
- Add the chicken and cook until browned, about 5 minutes.
- Add the bell peppers, onion, and garlic to the skillet and cook for an additional 5 minutes.
- In a small bowl, whisk together the Thai sweet chili sauce, soy sauce, fish sauce, lime juice, and brown sugar.
- Pour the sauce over the chicken and vegetables in the skillet.
- Cook for another 2-3 minutes, until the sauce has thickened slightly.
- Remove from heat and sprinkle with chopped cilantro and peanuts.
- Serve hot with steamed rice or noodles.
