With the salmon marinated in a flavorful homemade teriyaki sauce and served over a bed of fluffy rice with fresh vegetables, it's a feast for both the eyes and palate. Easy to prepare, this dish is perfect for quick dinners or meal preps.

Ingredients

  • 4 salmon fillets
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon grated ginger
  • 2 cloves garlic, minced
  • 4 cups cooked rice
  • 1 cup sliced cucumber
  • 1 cup shredded carrots
  • 1 cup sliced avocado
  • 1/4 cup chopped green onions
  • 1 tablespoon sesame seeds

Directions

  1. 1

Whisk together soy sauce, brown sugar, honey, rice vinegar, sesame oil, ginger, and garlic in a bowl.

  2. 2

Place salmon fillets in a dish and pour the marinade over them. Let marinate for at least 15 minutes.

  3. 3

Preheat oven to broil and line a baking sheet with parchment paper.

  4. 4

Remove salmon from marinade, place on baking sheet, and broil for 10-12 minutes until cooked through.

  5. 5

Simmer remaining marinade in a saucepan on medium heat until slightly thickened.

  6. 6

Assemble bowls by dividing cooked rice into four bowls, topping with salmon, cucumber, carrots, avocado, and green onions. Drizzle with thickened marinade and sprinkle with sesame seeds.

Chef's tip

For a low-carb option, substitute rice with cauliflower rice.
