  • 4 salmon fillets
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon grated ginger
  • 2 cloves garlic, minced
  • 4 cups cooked rice
  • 1 cup sliced cucumber
  • 1 cup shredded carrots
  • 1 cup sliced avocado
  • 1/4 cup chopped green onions
  • 1 tablespoon sesame seeds

Instructions

  • In a small bowl, whisk together soy sauce, brown sugar, honey, rice vinegar, sesame oil, ginger, and garlic.
  • Place salmon fillets in a shallow dish and pour the teriyaki sauce over the top. Marinate for at least 30 minutes.
  • Preheat oven to 400°F. Line a baking sheet with parchment paper.
  • Remove salmon from marinade and place on the prepared baking sheet. Bake for 12-15 minutes, or until salmon is cooked through.
  • To assemble the bowls, divide the cooked rice between four bowls. Top each bowl with a salmon fillet, cucumber, carrots, avocado, green onions, and sesame seeds.
  • Serve immediately and enjoy!
