This delicious and healthy teriyaki salmon bowl is perfect for a quick and easy weeknight dinner. The salmon is marinated in a homemade teriyaki sauce and served over a bed of rice with fresh vegetables.

- 4 salmon fillets
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons honey
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon grated ginger
- 2 cloves garlic, minced
- 4 cups cooked rice
- 1 cup sliced cucumber
- 1 cup shredded carrots
- 1 cup sliced avocado
- 1/4 cup chopped green onions
- 1 tablespoon sesame seeds
Instructions
- In a small bowl, whisk together soy sauce, brown sugar, honey, rice vinegar, sesame oil, ginger, and garlic.
- Place salmon fillets in a shallow dish and pour the teriyaki sauce over the top. Marinate for at least 30 minutes.
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- Remove salmon from marinade and place on the prepared baking sheet. Bake for 12-15 minutes, or until salmon is cooked through.
- To assemble the bowls, divide the cooked rice between four bowls. Top each bowl with a salmon fillet, cucumber, carrots, avocado, green onions, and sesame seeds.
- Serve immediately and enjoy!
