  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 head lettuce, shredded
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheddar cheese
  • 1 cup canned black beans, rinsed and drained
  • 1 cup canned corn, drained
  • 1/2 cup sliced black olives
  • 1/2 cup diced red onion
  • 1/2 cup diced bell pepper
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sliced jalapenos (optional)
  • 1 cup crushed tortilla chips
  • 1/2 cup sour cream
  • 1/4 cup salsa
  • 1/4 cup ranch dressing
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the taco seasoning and water according to the packet instructions. Simmer for 5 minutes.
  • In a large bowl, combine the shredded lettuce, cherry tomatoes, cheddar cheese, black beans, corn, black olives, red onion, bell pepper, cilantro, and jalapenos (if using). Toss to combine.
