- 1 pound ground beef
- 1 packet taco seasoning
- 1 head lettuce, shredded
- 1 cup cherry tomatoes, halved
- 1 cup shredded cheddar cheese
- 1 cup canned black beans, rinsed and drained
- 1 cup canned corn, drained
- 1/2 cup sliced black olives
- 1/2 cup diced red onion
- 1/2 cup diced bell pepper
- 1/4 cup chopped fresh cilantro
- 1/4 cup sliced jalapenos (optional)
- 1 cup crushed tortilla chips
- 1/2 cup sour cream
- 1/4 cup salsa
- 1/4 cup ranch dressing
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the taco seasoning and water according to the packet instructions. Simmer for 5 minutes.
- In a large bowl, combine the shredded lettuce, cherry tomatoes, cheddar cheese, black beans, corn, black olives, red onion, bell pepper, cilantro, and jalapenos (if using). Toss to combine.
- In a small bowl, whisk together the sour cream, salsa, ranch dressing, lime juice, salt, and pepper.
