Ingredients
- 1 cup bulgur
- 2 cups boiling water
- 1 cup chopped fresh parsley
- 1/2 cup chopped fresh mint
- 1/2 cup chopped fresh cilantro
- 1/2 cup diced cucumber
- 1/2 cup diced tomato
- 1/4 cup diced red onion
- 1/4 cup lemon juice
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Place the bulgur in a large bowl and pour the boiling water over it. Let it sit for about 30 minutes, or until the bulgur is tender and has absorbed all the water.
- Fluff the bulgur with a fork and let it cool to room temperature.
- Add the chopped parsley, mint, cilantro, cucumber, tomato, and red onion to the bowl with the bulgur.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss to combine.
- Cover the salad and refrigerate for at least 1 hour to allow the flavors to meld together.
