Ingredients

  • 1 cup bulgur
  • 2 cups boiling water
  • 1 cup chopped fresh parsley
  • 1/2 cup chopped fresh mint
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup diced cucumber
  • 1/2 cup diced tomato
  • 1/4 cup diced red onion
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  • Place the bulgur in a large bowl and pour the boiling water over it. Let it sit for about 30 minutes, or until the bulgur is tender and has absorbed all the water.
  • Fluff the bulgur with a fork and let it cool to room temperature.
