Ingredients
- 1 lb chicken breast, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1/4 cup sweet Thai chili sauce
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- 1 tablespoon brown sugar
- 1/2 teaspoon red pepper flakes
- 1/4 cup chopped fresh cilantro
- Cooked rice, for serving
Instructions
- In a large skillet, heat some oil over medium heat.
- Add the chicken and cook until browned and cooked through, about 5 minutes.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the bell peppers, onion, and garlic.
- Cook until the vegetables are tender, about 5 minutes.
- In a small bowl, whisk together the sweet Thai chili sauce, soy sauce, fish sauce, lime juice, brown sugar, and red pepper flakes.
- Pour the sauce over the vegetables in the skillet and stir to coat.
- Return the chicken to the skillet and cook for an additional 2 minutes, until everything is heated through.
- Remove from heat and stir in the chopped cilantro.
- Serve the sweet Thai chili delight over cooked rice.
