Ingredients
- 1 small sweet red cabbage, shredded
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 4 cups vegetable broth
- 1 cup apple juice
- 2 tablespoons brown sugar
- 1 tablespoon apple cider vinegar
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Optional toppings: sour cream, chopped fresh parsley
Instructions
- In a large pot, heat some oil over medium heat.
- Add the onion, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
- Add the shredded red cabbage and cook for another 5 minutes.
- Pour in the vegetable broth and apple juice. Stir in the brown sugar, apple cider vinegar, dried thyme, salt, and pepper.
- Bring the soup to a boil, then reduce the heat and let it simmer for about 30 minutes, or until the cabbage is tender.
- Using an immersion blender or a regular blender, puree the soup until smooth.
- Taste and adjust the seasoning if needed.
- Serve the soup hot, garnished with sour cream and chopped fresh parsley if desired.
