Ingredients

  • 1 small sweet red cabbage, shredded
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 1 cup apple juice
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional toppings: sour cream, chopped fresh parsley

Instructions

  • In a large pot, heat some oil over medium heat.
  • Add the onion, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
  • Add the shredded red cabbage and cook for another 5 minutes.
  • Pour in the vegetable broth and apple juice. Stir in the brown sugar, apple cider vinegar, dried thyme, salt, and pepper.
  • Bring the soup to a boil, then reduce the heat and let it simmer for about 30 minutes, or until the cabbage is tender.
  • Using an immersion blender or a regular blender, puree the soup until smooth.
  • Taste and adjust the seasoning if needed.
  • Serve the soup hot, garnished with sour cream and chopped fresh parsley if desired.
