- 1 medium sweet potato
- 1/2 cup quinoa
- 1 cup black beans
- 1/2 avocado
- 1/4 cup cherry tomatoes
- 1/4 cup corn
- 1/4 cup red onion
- 1/4 cup cilantro
- 1/4 cup Greek yogurt
- 1/4 cup salsa
- 1 lime
- Salt and pepper to taste
Instructions
- 1. Preheat the oven to 400°F.
- 2. Wash the sweet potato and poke holes in it with a fork. Place it on a baking sheet and bake for 45-60 minutes, or until soft.
- 3. Cook the quinoa according to package instructions.
- 4. Rinse and drain the black beans.
- 5. Chop the avocado, cherry tomatoes, red onion, and cilantro.
- 6. Once the sweet potato is cooked, let it cool slightly before slicing it in half.
- 7. In a bowl, combine the quinoa, black beans, avocado, cherry tomatoes, corn, red onion, and cilantro.
- 8. Squeeze the lime over the mixture and season with salt and pepper.
- 9. Top the sweet potato halves with the quinoa mixture.
- 10. Garnish with Greek yogurt, salsa, and additional cilantro.
