Ingredients

  • 1 medium sweet potato
  • 1/2 cup quinoa
  • 1 cup black beans
  • 1/2 avocado
  • 1/4 cup cherry tomatoes
  • 1/4 cup corn
  • 1/4 cup red onion

  • 1 lime

Instructions
