Ingredients

  • 2 cups sushi rice
  • 1/4 cup rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 avocado, sliced
  • 1 carrot, julienned
  • 1 cucumber, sliced
  • 1/2 cup edamame, shelled
  • 1/2 cup pickled ginger
  • 1/4 cup soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sesame seeds
  • 1/2 pound sushi-grade raw fish (optional)
  • 1/4 cup nori, thinly sliced

Instructions

  • Cook the sushi rice according to package instructions.
  • In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved. Drizzle the mixture over the cooked rice and gently fold it in to combine.
  • Divide the sushi rice among serving bowls.
  • Arrange the avocado, carrot, cucumber, edamame, pickled ginger, and raw fish (if using) on top of the rice.
  • Drizzle the soy sauce and sesame oil over the ingredients.
  • Sprinkle with sesame seeds and nori slices.
  • Serve immediately and enjoy!
