Ingredients
- 2 cups sushi rice
- 1/4 cup rice vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 avocado, sliced
- 1 carrot, julienned
- 1 cucumber, sliced
- 1/2 cup edamame, shelled
- 1/2 cup pickled ginger
- 1/4 cup soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon sesame seeds
- 1/2 pound sushi-grade raw fish (optional)
- 1/4 cup nori, thinly sliced
Instructions
- Cook the sushi rice according to package instructions.
- In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved. Drizzle the mixture over the cooked rice and gently fold it in to combine.
- Divide the sushi rice among serving bowls.
- Arrange the avocado, carrot, cucumber, edamame, pickled ginger, and raw fish (if using) on top of the rice.
- Drizzle the soy sauce and sesame oil over the ingredients.
- Sprinkle with sesame seeds and nori slices.
- Serve immediately and enjoy!
