- 1 pound beef stew meat, cut into 1-inch cubes

- 1/2 teaspoon black pepper
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups chopped vegetables (carrots, celery, bell peppers)
- 1 tablespoon tomato paste
- 1 can (14 oz) diced tomatoes
- 2 cups low-sodium beef broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon smoked paprika
- 1 bay leaf

Heat olive oil in a large pot over medium-high heat. Season beef with salt and pepper, then sear until browned on all sides. Remove from pot and set aside.
