- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup granulated sugar
- 1/4 cup fresh orange juice
- 1/4 cup fresh lemon juice
- 1 tablespoon grated orange zest
- 1 tablespoon grated lemon zest
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F. Grease an 8-inch square baking pan.
- In a medium bowl, whisk together the flour and powdered sugar. Cut in the butter with a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Press the mixture into the bottom of the prepared pan. Bake for 15-20 minutes, or until lightly golden brown.
- Meanwhile, in a large bowl, whisk together the eggs, granulated sugar, orange juice, lemon juice, orange zest, lemon zest, baking powder, and salt until well combined.
- Pour the mixture over the hot crust and return to the oven. Bake for an additional 20-25 minutes, or until set.
- Let cool completely in the pan on a wire rack. Cut into squares and serve.
