Sugar-Free Avocado Cookies

About this recipe

These sugar-free avocado cookies are a deliciously healthy treat, substituting avocado for unhealthy fats and erythritol for sugar. Perfect for those minding their sugar intake, these cookies offer the right balance of sweetness and texture.

Ingredients

  • 1 ripe avocado, mashed
  • 1/2 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 cup unsweetened applesauce
  • 1/4 cup erythritol
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup sugar-free chocolate chips (optional)

Directions

  1. 1

Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.

  2. 2

Mash the ripe avocado in a mixing bowl until smooth.

  3. 3

Add almond flour, coconut flour, applesauce, erythritol, vanilla extract, baking soda, and salt. Mix until well blended.

  4. 4

Fold in the chocolate chips, if using.

  5. 5

Scoop tablespoon-sized amounts of dough onto the prepared baking sheet and flatten each gently with a fork.

  6. 6

Bake for 12-15 minutes until the edges are golden brown.

  7. 7

Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Chef's tip

For a more chocolatey flavor, drizzle some melted sugar-free chocolate over the cooled cookies. Ensure avocados are ripe for easier mashing and better texture.
