- 1 ripe avocado
- 1/2 cup almond flour
- 1/2 cup coconut flour
- 1/2 cup unsweetened applesauce
- 1/4 cup erythritol
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup sugar-free chocolate chips (optional)
Instructions
- Preheat oven to 350°F.
- In a large mixing bowl, mash the avocado until smooth.
- Add in the almond flour, coconut flour, applesauce, erythritol, vanilla extract, baking soda, and salt. Mix until well combined.
- Fold in the chocolate chips, if using.
- Scoop the dough onto a baking sheet lined with parchment paper, and flatten each cookie with a fork.
- Bake for 12-15 minutes, or until the edges are golden brown.
- Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
