Ingredients

  • 4 large bell peppers
  • 1 lb ground beef
  • 1 cup cooked quinoa
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1/4 cup water

Directions

    Preheat the oven to 400°F (200°C).

    Cut the tops off the bell peppers and remove seeds and membranes.

    In a skillet, heat olive oil over medium heat. Cook the onion and garlic until fragrant.
