Ingredients

  • 4 large bell peppers
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 cup cooked quinoa
  • 1 can (14.5 ounces) diced tomatoes
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 cup shredded mozzarella cheese
  • Salt and pepper to taste

Directions

    Preheat the oven to 375°F (190°C).

    Cut the tops off the bell peppers and remove the seeds and membranes.

    Drizzle the insides with olive oil and place them in a baking dish.

    In a skillet over medium heat, cook the ground beef until browned. Add onion and garlic, cooking until soft.
