Ingredients
- 2 eggs
- 1 cup spinach
- 1/2 cup mushrooms
- 1/4 cup shredded cheese
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- 1. Heat olive oil in a non-stick pan over medium heat.
- 2. Add mushrooms and cook until they release their moisture and become golden brown.
- 3. Add spinach and cook until wilted.
- 4. In a bowl, beat the eggs and season with salt and pepper.
- 5. Pour the beaten eggs into the pan with the mushrooms and spinach.
- 6. Cook until the edges start to set, then gently lift the edges with a spatula to allow the uncooked eggs to flow underneath.
- 7. Sprinkle shredded cheese on one half of the omelette.
- 8. Fold the other half of the omelette over the cheese.
- 9. Cook for another minute or until the cheese is melted and the omelette is cooked through.
- 10. Serve hot and enjoy!
