Ingredients

  • 2 eggs
  • 1 cup spinach
  • 1/2 cup mushrooms
  • 1/4 cup shredded cheese
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  • 1. Heat olive oil in a non-stick pan over medium heat.
  • 2. Add mushrooms and cook until they release their moisture and become golden brown.
  • 3. Add spinach and cook until wilted.
  • 4. In a bowl, beat the eggs and season with salt and pepper.
  • 5. Pour the beaten eggs into the pan with the mushrooms and spinach.
  • 6. Cook until the edges start to set, then gently lift the edges with a spatula to allow the uncooked eggs to flow underneath.
  • 7. Sprinkle shredded cheese on one half of the omelette.
  • 8. Fold the other half of the omelette over the cheese.
  • 9. Cook for another minute or until the cheese is melted and the omelette is cooked through.
