Ingredients
- 1 cup brown rice
- 2 cups water
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 2 cups broccoli florets
- 2 cups fresh spinach
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
Instructions
- 1. Rinse the brown rice in a fine mesh strainer and add it to a medium saucepan with 2 cups of water. Bring to a boil, then reduce the heat to low and cover the pot. Cook for 40-45 minutes, or until the rice is tender and the water has been absorbed.
- 2. While the rice is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for 1-2 minutes, or until fragrant.
- 3. Add the broccoli florets to the skillet and cook for 5-7 minutes, or until tender. Add the spinach and cook for an additional 2-3 minutes, or until wilted.
- 4. Season the vegetables with salt and black pepper, then remove the skillet from the heat.
- 5. When the rice is done cooking, fluff it with a fork and divide it between 4 bowls.
- 6. Top each bowl of rice with the cooked vegetables and sprinkle with grated Parmesan cheese.
