Ingredients

  • 1 cup brown rice
  • 2 cups water
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 2 cups broccoli florets
  • 2 cups fresh spinach
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  • 1. Rinse the brown rice in a fine mesh strainer and add it to a medium saucepan with 2 cups of water. Bring to a boil, then reduce the heat to low and cover the pot. Cook for 40-45 minutes, or until the rice is tender and the water has been absorbed.
  • 2. While the rice is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for 1-2 minutes, or until fragrant.
  • 3. Add the broccoli florets to the skillet and cook for 5-7 minutes, or until tender. Add the spinach and cook for an additional 2-3 minutes, or until wilted.
