Ingredients

  • 4 large potatoes, peeled and sliced
  • 1 head of broccoli, chopped
  • 2 cups of fresh spinach
  • 1 onion, chopped
  • 4 cloves of garlic, minced
  • 1/2 cup of milk
  • 1/2 cup of grated Parmesan cheese
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375°F.
  • In a large pot, boil the sliced potatoes for 10 minutes or until they are just tender. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic and sauté until the onion is translucent.
  • Add the chopped broccoli and sauté for 5 minutes or until it is just tender.
  • Add the fresh spinach and sauté until it is wilted.
  • In a large mixing bowl, combine the boiled potatoes, sautéed vegetables, milk, and grated Parmesan cheese. Mix well.
  • Transfer the mixture to a large baking dish and bake for 25-30 minutes or until the top is golden brown and the potatoes are fully cooked.
