Ingredients
- 4 large potatoes, peeled and sliced
- 1 head of broccoli, chopped
- 2 cups of fresh spinach
- 1 onion, chopped
- 4 cloves of garlic, minced
- 1/2 cup of milk
- 1/2 cup of grated Parmesan cheese
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F.
- In a large pot, boil the sliced potatoes for 10 minutes or until they are just tender. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic and sauté until the onion is translucent.
- Add the chopped broccoli and sauté for 5 minutes or until it is just tender.
- Add the fresh spinach and sauté until it is wilted.
- In a large mixing bowl, combine the boiled potatoes, sautéed vegetables, milk, and grated Parmesan cheese. Mix well.
- Transfer the mixture to a large baking dish and bake for 25-30 minutes or until the top is golden brown and the potatoes are fully cooked.
