Ingredients
- 1 cup quinoa
- 1 can black beans, drained and rinsed
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 jalapeno pepper, sliced
- 1 avocado, sliced
- 1/4 cup chopped cilantro
- 1 lime, juiced
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Cook quinoa according to package instructions.
- In a large skillet, heat olive oil over medium-high heat.
- Add sliced bell peppers and jalapeno pepper to the skillet and sauté for 5-7 minutes, until peppers are tender.
- Add black beans, cumin, chili powder, salt, and pepper to the skillet and stir to combine.
- In a large bowl, combine cooked quinoa, black bean and pepper mixture, sliced avocado, chopped cilantro, and lime juice.
- Toss everything together until well combined.
