Ingredients

  • 1 cup quinoa
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 jalapeno pepper, sliced
  • 1 avocado, sliced
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  • Cook quinoa according to package instructions.
  • In a large skillet, heat olive oil over medium-high heat.
  • Add sliced bell peppers and jalapeno pepper to the skillet and sauté for 5-7 minutes, until peppers are tender.
  • Add black beans, cumin, chili powder, salt, and pepper to the skillet and stir to combine.
