Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 jalapeno pepper, seeded and minced
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (28 ounces) diced tomatoes, undrained
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (15 ounces) kidney beans, rinsed and drained
- 1 can (15 ounces) corn, drained
- 1 cup vegetable broth
- 1/4 cup chopped fresh cilantro
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Add the bell peppers and jalapeno pepper and cook for another 5 minutes.
- Stir in the chili powder, cumin, smoked paprika, oregano, salt, and black pepper.
- Add the diced tomatoes, black beans, kidney beans, corn, and vegetable broth.
- Bring to a simmer and cook for 20-30 minutes, until the vegetables are tender and the flavors have melded together.
- Stir in the chopped cilantro and serve hot.
