Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 jalapeno pepper, seeded and minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (28 ounces) diced tomatoes, undrained
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) kidney beans, rinsed and drained
  • 1 can (15 ounces) corn, drained
  • 1 cup vegetable broth
  • 1/4 cup chopped fresh cilantro

Instructions

  • In a large pot or Dutch oven, heat the olive oil over medium heat.
  • Add the onion and garlic and cook until softened, about 5 minutes.
  • Add the bell peppers and jalapeno pepper and cook for another 5 minutes.
  • Stir in the chili powder, cumin, smoked paprika, oregano, salt, and black pepper.
  • Add the diced tomatoes, black beans, kidney beans, corn, and vegetable broth.
  • Bring to a simmer and cook for 20-30 minutes, until the vegetables are tender and the flavors have melded together.
  • Stir in the chopped cilantro and serve hot.
