- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 carrots, sliced
- 1 red bell pepper, sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup peanuts, chopped
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon sriracha
- 1 tablespoon cornstarch
- 1/4 cup water
Instructions
- Heat the oil in a large skillet over medium-high heat.
- Add the onion, garlic, and ginger and cook until softened, about 3 minutes.
- Add the carrots and bell pepper and cook for another 5 minutes, until the vegetables are tender.
- Add the cherry tomatoes and peanuts and cook for another 2 minutes.

- Pour the sauce over the vegetables and stir to coat.
- Cook for another 2-3 minutes, until the sauce has thickened and the vegetables are coated.
