This savory stir fry combines the vibrant flavors of carrots, bell peppers, and cherry tomatoes with a spicy peanut sauce that's deliciously rich and satisfying. It's a quick and simple recipe perfect for a nutritious meal, offering a fulfilling balance of vegetables and plant-based protein.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced

  • 1/4 cup water

Directions

  1. 1

Heat the vegetable oil in a large skillet over medium-high heat.

  2. 2

Add onion, garlic, and ginger; sauté until the onion begins to soften, about 2-3 minutes.

  3. 3

  4. 4

Mix in the cherry tomatoes and peanuts; continue cooking for 2 minutes.

  5. 5

Combine soy sauce, peanut butter, honey, sriracha, cornstarch, and water in a small bowl; whisk until smooth.

  6. 6

Pour the peanut sauce over the vegetables, stirring continually to coat.

  7. 7

Cook for another 2-3 minutes until the sauce thickens.

  8. 8

Serve immediately over steamed rice or noodles, garnished with additional peanuts if desired.

Chef's tip

For a gluten-free version, use tamari instead of soy sauce. Adjust sriracha to taste for desired spice level.
