Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons vegetable oil
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1/4 cup chopped jalapenos

Instructions

  • In a large bowl, whisk together the flour, sugar, baking powder, salt, cayenne pepper, paprika, garlic powder, onion powder, and black pepper.
  • In a separate bowl, whisk together the buttermilk, egg, and vegetable oil.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Fold in the shredded cheddar cheese, chopped green onions, and chopped jalapenos.
  • Heat a large non-stick skillet or griddle over medium heat.
  • Pour 1/4 cup of batter onto the skillet for each pancake.
  • Cook until bubbles form on the surface of the pancake, then flip and cook for an additional 1-2 minutes.
  • Repeat with the remaining batter.
