Ingredients
- 8 oz. soba noodles
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cucumber, sliced
- 1 carrot, shredded
- 1/4 cup chopped cilantro
- 1/4 cup chopped green onions
- 1/4 cup chopped peanuts
- 1/4 cup sesame seeds
- 1/4 cup soy sauce
- 2 tbsp. rice vinegar
- 2 tbsp. honey
- 1 tbsp. sesame oil
- 1 tbsp. sriracha sauce
- 1 clove garlic, minced
Instructions
- Cook soba noodles according to package instructions. Drain and rinse with cold water.
- In a large bowl, combine cooked noodles, sliced bell peppers, cucumber, shredded carrot, cilantro, and green onions.
- In a small bowl, whisk together soy sauce, rice vinegar, honey, sesame oil, sriracha sauce, and minced garlic.
- Pour dressing over noodle mixture and toss to combine.
- Garnish with chopped peanuts and sesame seeds.
- Serve chilled.
