Ingredients

  • 8 oz. soba noodles
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cucumber, sliced
  • 1 carrot, shredded
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped green onions
  • 1/4 cup chopped peanuts
  • 1/4 cup sesame seeds
  • 1/4 cup soy sauce
  • 2 tbsp. rice vinegar
  • 2 tbsp. honey
  • 1 tbsp. sesame oil
  • 1 tbsp. sriracha sauce
  • 1 clove garlic, minced

Instructions

  • Cook soba noodles according to package instructions. Drain and rinse with cold water.
  • In a large bowl, combine cooked noodles, sliced bell peppers, cucumber, shredded carrot, cilantro, and green onions.
  • In a small bowl, whisk together soy sauce, rice vinegar, honey, sesame oil, sriracha sauce, and minced garlic.
  • Pour dressing over noodle mixture and toss to combine.
