Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tbsp vegetable oil
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup canned diced tomatoes
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tbsp fresh cilantro, chopped

Instructions

  • In a large skillet, heat the vegetable oil over medium-high heat.
  • Add the onion and cook until softened, about 5 minutes.
  • Add the garlic and ginger and cook for another minute.
  • Add the chicken and cook until browned on all sides, about 5 minutes.
  • Add the cumin, coriander, turmeric, paprika, cayenne pepper, salt, and black pepper and stir to combine.
  • Add the diced tomatoes and chicken broth and bring to a simmer.
  • Reduce the heat to low and let simmer for 20 minutes, stirring occasionally.
  • Stir in the heavy cream and let simmer for another 5 minutes.
  • Garnish with fresh cilantro and serve over rice or with naan bread.
