Spicy Masala Chicken Curry

- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tbsp vegetable oil
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp turmeric
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup canned diced tomatoes
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 2 tbsp fresh cilantro, chopped
- In a large skillet, heat the vegetable oil over medium-high heat.
- Add the onion and cook until softened, about 5 minutes.
- Add the garlic and ginger and cook for another minute.
- Add the chicken and cook until browned on all sides, about 5 minutes.
- Add the cumin, coriander, turmeric, paprika, cayenne pepper, salt, and black pepper and stir to combine.
- Add the diced tomatoes and chicken broth and bring to a simmer.
- Reduce the heat to low and let simmer for 20 minutes, stirring occasionally.
- Stir in the heavy cream and let simmer for another 5 minutes.
