Ingredients

  • 1 lb chicken breast, thinly sliced
  • 2 ripe mangoes, peeled and diced
  • 1 red bell pepper, julienned
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp sriracha sauce
  • 1 tbsp honey
  • 1 tsp fresh ginger, grated
  • 1/2 tsp red pepper flakes
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • 1 tbsp cornstarch
  • 1 tbsp sesame seeds for garnish (optional)
  • Cooked rice or noodles for serving

Directions

  1. 1

Toss chicken with cornstarch in a bowl until evenly coated.

  2. 2

In a small bowl, mix soy sauce, sriracha, honey, ginger, and red pepper flakes.

  3. 3

Heat 1 tbsp of oil in a large skillet over medium-high heat; cook chicken until browned, about 5 minutes.

  4. 4

Remove chicken and set aside. Add remaining oil to the skillet, then cook onion, bell pepper, and garlic for 2 minutes.

  5. 5

Return chicken to the skillet, pour in the sauce, and stir to combine.

  6. 6

Toss in mangoes and cook for 2 more minutes until heated through.

  7. 7

Season with salt and pepper, garnish with sesame seeds if desired, and serve hot over rice or noodles.

Chef's tip

Ensure mangoes are ripe yet firm for easy slicing and a balanced texture with the stir-fry.
