Ingredients

  • 8 oz udon noodles
  • 2 tbsp gochujang paste
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • 1/2 cup sliced bell peppers
  • 1/2 cup sliced onions
  • 1/2 cup sliced mushrooms
  • 1/2 cup sliced carrots
  • 1/2 cup tofu, cubed
  • 2 green onions, chopped

Instructions

  • Cook udon noodles according to package instructions, then drain and set aside.
  • In a small bowl, mix together gochujang paste, soy sauce, sesame oil, and sugar to make the sauce.
  • In a large pan, heat some oil over medium heat and sauté bell peppers, onions, mushrooms, carrots, and tofu until slightly softened.
  • Add the cooked udon noodles and sauce to the pan, tossing everything together until well combined and heated through.
  • Serve hot, garnished with chopped green onions.
