Ingredients
- 8 oz udon noodles
- 2 tbsp gochujang paste
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp sugar
- 1/2 cup sliced bell peppers
- 1/2 cup sliced onions
- 1/2 cup sliced mushrooms
- 1/2 cup sliced carrots
- 1/2 cup tofu, cubed
- 2 green onions, chopped
Instructions
- Cook udon noodles according to package instructions, then drain and set aside.
- In a small bowl, mix together gochujang paste, soy sauce, sesame oil, and sugar to make the sauce.
- In a large pan, heat some oil over medium heat and sauté bell peppers, onions, mushrooms, carrots, and tofu until slightly softened.
- Add the cooked udon noodles and sauce to the pan, tossing everything together until well combined and heated through.
- Serve hot, garnished with chopped green onions.
