Ingredients
- 1 lb chicken breast
- 2 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 jalapeno pepper, diced
- 1 can diced tomatoes
- 2 tbsp tomato paste
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- 1 cup chicken broth
- 1 cup cooked rice
- Fresh cilantro for garnish
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add diced onion and minced garlic, sauté until fragrant.
- Add chicken breast and cook until browned on all sides.
- Remove chicken from skillet and set aside.
- In the same skillet, add sliced bell peppers and diced jalapeno pepper.
- Sauté until peppers are tender.
- Add diced tomatoes, tomato paste, chili powder, cumin, paprika, cayenne pepper, salt, and pepper.
- Stir well to combine.
- Return chicken to skillet and add chicken broth.
- Cover and simmer for 20 minutes, or until chicken is cooked through.
- Serve over cooked rice and garnish with fresh cilantro.
