Ingredients

  • 1 lb chicken breast
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 jalapeno pepper, diced
  • 1 can diced tomatoes
  • 2 tbsp tomato paste
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 1 cup cooked rice
  • Fresh cilantro for garnish

Instructions

  • In a large skillet, heat olive oil over medium heat.
  • Add diced onion and minced garlic, sauté until fragrant.
  • Add chicken breast and cook until browned on all sides.
  • Remove chicken from skillet and set aside.
  • In the same skillet, add sliced bell peppers and diced jalapeno pepper.
  • Sauté until peppers are tender.
  • Add diced tomatoes, tomato paste, chili powder, cumin, paprika, cayenne pepper, salt, and pepper.
  • Stir well to combine.
  • Return chicken to skillet and add chicken broth.
  • Cover and simmer for 20 minutes, or until chicken is cooked through.
  • Serve over cooked rice and garnish with fresh cilantro.
