Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 8 cups chicken broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon soy sauce
  • 1 tablespoon sriracha
  • 1 tablespoon sesame oil
  • 1 teaspoon red pepper flakes
  • 1 cup sliced mushrooms
  • 1 cup chopped bok choy
  • 1/4 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  • In a large pot, bring the chicken broth to a boil.
  • Add the chicken breasts, onion, garlic, ginger, soy sauce, sriracha, sesame oil, and red pepper flakes.
  • Reduce the heat and simmer for 20 minutes, or until the chicken is cooked through.
  • Remove the chicken from the pot and shred it with two forks.
  • Return the chicken to the pot and add the mushrooms and bok choy.
  • Simmer for another 10 minutes, or until the vegetables are tender.
  • Stir in the cilantro and serve with lime wedges.
